Yes, we are alive!

It has been a bit frustrating but for a limited time we have internet. Internet has been so sketchy, we check everyday and we often go a couple days and can't connect. Today has been the longest that we have been able to be on. Since we got back we often would try to get on and would have internet for a couple minutes every couple of days....ahhhhhh! The frustrating part has been that it is our only means of communicating or knowing what is going on outside this bubble. What a challenge it has been not to receive help or give updates on the past couple weeks. We had one week of scratch cooking classes and then this past week we had to cook all week by scratch. We couldn't use appliances, {toaster, coffeemaker, microwave, and mixer} you get the idea. We couldn’t eat anything out of a can or box, or instant. I have put together a slide show and an album on the right so you can see what we've made. We liked everything our menu consisted of..."Breakfast": perked coffee {thank you Keith & Sue Schrader}, powdered milk {YUM!} Crepes {filled with strawberry jam or chocolate chips}, eggs, bacon, toast {toasted in frying pan} it's was yummie with some sugar and cinnamon sprinkled on top. "Lunch": Egg salad & chicken salad sandwiches, tossed salad {with homemade French dressing, YUM} or broccoli salad or tacos with homemade tortilla's {these were a favorite}. "Dinner": Macaroni & Cheese, canned peaches and pears, Tacos. We were asked to have company one night so we invited our good friends, Hank & Margaret Demark and Cynthia Mushaluk. I'm not sure of my "normal" cooking so by scratch was a test. But with good friends we could have a good laugh or cry together. I made Sweet & Sour Chicken with rice and green beans. They all approved and were healthy enough to come back to work the next day...thanks guys for eating with us! Some extras that we made was...sour cream, Yogurt {didn't turn out, I will try again} Hot Cocoa, Granola, Bread, French dressing. Things that we will continue making from scratch are...pizza, crepes, tortillas and on occasion bread. Mine turned out good but it was ugly. I don't know how to knead and I think I added to much flour...oh well! We ate it anyways. The guys were very patient and gracious.
Friday night we had a class Potluck with everything made from scratch...it was all soooooo good! I made Empanada's and pastries, some filled with strawberries and some with peaches. Hope you enjoy the pictures! Love you all, Jen {for the Morlang Gang!}
